One of the most popular foods you can make with a couple of pounds of ground beef is meatloaf. All you have to do is add a few ingredients to the meat and pop it in the oven. While iṭ€™s cooking, you can prepare a quick salad. The leftovers will make really great sandwiches for lunch. Herẹ€™s the recipe for this quick meatloaf: 2 pounds of lean ground beef, 1 can of tomato soup, 1 yellow onion thaṭ€™s been finely diced, 1 cup of rolled oats, 2 beaten eggs, 1 tablespoon of steak sauce, 1/2 cup of ketchup and 3 tablespoons of prepared mustard. Preheat the oven to 350 degrees. Prepare a 9x5-inch loaf pan with cooking spray. In a large bowl, combine all of the ingredients and, using your hands, or a large spoon, mix it up really well until everything is blended. Place the meatloaf mixture into the pan and press down. Bake the loaf for 1 hour or until it is lightly browned. Let it stand for 5 to 10 minutes before serving. BONUS RECIPE = Southwest Meatloaf This meatloaf recipe includes salsa and barbecue sauce, which gives it that special Tex-Mex tang. 1 1/2 pounds of ground beef, 2 eggs, 1/2 cup of chopped yellow onion, 1/2 cup of Italian bread crumbs, 1/2 cup of salsa, 1/4 cup of ketchup, 1/4 cup of barbecue sauce, one teaspoon of salt, 1 teaspoon of ground black pepper and 1/2 teaspoon of celery salt. Prepare a 9x5-inch loaf pan with cooking spray. In a large bowl, combine the ground beef, eggs, onion, bread crumbs, salsa, ketchup, barbecue sauce, celery salt and salt and pepper. With your hands, or a large spoon, mix thoroughly until everything is well blended. Place the mixture into the pan and press it down. Bake the loaf for 1 hour, or until it is firm and light brown. Take out of the oven and let it cool for up to 10 minutes before serving.
